2 cups cooked lima beans
juice of one lemon
4 tbsp olive oil
1 bunch parsley, chopped
4-6 cloves garlic, to taste
several good shakes of cayenne
salt and pepper to taste
Whizz it all in the food processor, then slather it on bread for sandwiches, or scoop it up with veggies or tortilla chips, or just eat it with a spoon...lima-ey love!
