Comprehensive Salad with Avocado Dressing

OOOOHHHH YEAH! I make good lunch. Today it's a salad with lots and lots of good stuff in it. When I first started cooking for myself salad was not something I thought much about...and when I made it, it was generally much the same every time. Now I am getting more freaky with my salad, making giant meal-sized combos of random things that nearly always taste good together...two days ago it was leftover curried lentils, sauteed portabello and fresh apple with seeds and balsamic vinagrette...today, it's this baby:















My salad o' the day was made much prettier and easier to eat thanks to my trusty mandoline, which allows me to do paper-thin pieces of mushroom, beet, and most anything really (you may not believe all these things are on there because of the blanket of avo dressing on top - but here's what it contains):

Lettuce (from the Lettuce Farm...someone once described it as delicious tissue paper!)
green cabbage, shredded
green beans (raw), chopped
2 mushrooms (raw), shaved
1/2 a  large beet, shredded
1/2 apple, shredded
2 tbsp hemp hearts
2 tbsp raw sesame seeds
1 tbsp raw pumpkin seeds
handful raw macadamia nuts

And it's all doused well with Avocado Dressing:

1/2 avocado
1 tsp garlic chili flax oil
2 tbsp lemon juice
pinch of pink himalayan salt

Blend all this up with a hand blender till it's creamy, then drizzle in water and blend again until it's the consistency you like. Pour that deliciousness onto your salad deliciousness. Bon Appetit!
