Vegan Arugula-Lime Pesto



I bought a box of organic baby arugula the other day because it was the most decent-looking green stuff at the store. Arugula is awesome but sometimes I don't like it! As in: I am not a fan of using it in salad. However, it is a perfect foil for pesto-y goodness, wherein the bite of the arugula is tempered deliciously by the combination of lime juice, nuts/seeds and garlic!

This will take about five minutes to make. Then the hard part: what to use it on? I opted for pasta with chopped tomatoes, olives and avo for day one, and as spread on a wrap for day two...today, perhaps it will get tossed with some asparagus...

I would say this recipe makes between a cup and a cup and a half of the green heaven known as pesto.







Arugula-Lime Pesto

2 cups packed arugula leaves
1-2 cloves garlic
1/3 cup brazil nuts (other nuts like almonds or macadamias would be good here too)
1/4 cup hemp seeds
2-3 tbsp olive oil
1 tbsp plus 1 tsp lime juice
salt to taste

Put the nuts, then the leaves, then everything else in a food processor, and pulse until smooth. That is it! Keeps for a week or so in the fridge...in theory.
