Rice Paper Rolls with Spicy Peanut Sauce

























I am now eating rice. This is a glorious thing. Rice! So versatile that you can even make paper from it! Do yourself a favour - get some rice paper and make yourself a few of these light and refreshing rolls. You are welcome.

(If you can't eat rice, never fear. You could make the spicy sauce and dip some lettuce wraps in it! Still mega-delicious!)

Rice Paper Rolls with Spicy Peanut Sauce


Medium size rice paper (I prefer this to the small size but you could make lil rolls too)
For each roll:
finely julienned carrot (I did mine on the mandoline)
finely julienned cucumber
thinly sliced red pepper
lettuce
basil, mint or cilantro, if you have it

Wet 2 paper towels. Spread one on a clean surface and lay a piece of rice paper on top. Cover this with the other wet paper towel and wait about a minute, until the paper is softened and pliable. Remove top paper towel and arrange the filling ingredients in the middle of the paper. Fold the two ends in and roll the paper around the filling. It should seal itself into a lovely handheld package of deliciousness. Put aside on a plate and start soaking the next piece of paper to start rolling again...and repeat till you have made as many rolls as you want to eat!

The sauce should do for at least 8 rolls' worth of eaten':

Dipping Sauce
3 tbsp natural peanut butter
1 tsp tamari
1 tsp honey or agave
1 tsp sesame oil
1 tsp sriracha hot sauce
1 tbsp lemon juice
2 tbsp hot water

Put all ingredients in the blender and whizz it up. Delicious! Leftover sauce keeps well in the fridge for at least a few days...
Now, take your rolls outdoors to eat them and enjoy!
