Thai-Inspired Dressing:
Liquid and half the solids from one can of full-fat coconut milk
2 tbsp spicy peanut butter (or 2 tbsp regular peanut butter plus 1/8 tsp cayenne pepper)
juice of 1/2 lime
1/2 avocado
large handful of cilantro
1 tsp cumin
1/2 tsp turmeric
1/2 tsp crushed red chilis
3 garlic scapes or 1-2 cloves garlic
2 tbsp sesame oil
salt to taste
Blend and adjust seasonings and chill till ready to use.
Zucchini and Squash Noodles
1 medium zuchinni, ends trimmed
1 medium yellow summer squash, ends trimmed
olive oil
salt and pepper
Using a mandoline or spiralizer, cut the squash into long, thin noodles. Toss noodles with a little olive oil, and season to taste. Warm in a glass dish in the dehydrator at 118 F with the other dishes.
Kale and Mizuna
1 bunch kale (or other greens like chard or spinach)
1 large handful mizuna (or other peppery greens like arugula, cress etc)
olive oil
salt
1/3 cup or so of the Thai dressing
Cut the greens into thin strips and finely chop the stems. Massage with a little oil and salt and put in a glass pan in the dehydrator with the other veggies for 45 minutes. Then add some of the dressing, coat and return to dehydrator for the final 1/2 hour or so of warming time.
Marinated Vegetables with Chili and Lime
1 carrot, cut very thin
1/2 yellow pepper, cut very thin
3-4 button mushrooms, cut very thin
3-4 shiitake mushrooms, cut very thin
5-6 thin spears asparagus, sliced in halves or quarters
several tablespoons olive oil
juice of 1/2 lime
salt to taste
1/8 tsp crushed chilis
Slice all veggies very thin either by hand or with a mandoline. Toss in the marinade to coat and put in a glass dish in the dehydrator for about 45 min on high, then stir and turn temperature down to 118 F. Dehydrate till veggies are softened but still a little crispy and serve warm.
